  • 1-1/2 pound flank steak, plus more for grill
  • 2 tablespoons olive oil (additional for grill)
  • 3 tablespoons Falcon and Flash Smoky Joe Steak Rub (use more if you want a stronger flavor)




  1. Prepare a grill for medium-high heat; oil grates
  2. Coat flank steak with 3 tablespoons of Falcon and Flash Smoky Joe Steak Rub, packing on more than once if needed, and drizzle with 2 tablespoons oil to help rub adhere
  3. Grill steak, turning occasionally and moving as needed to a cooler spot on grill in order to control flare ups—about 4 minutes per side for medium-rare and an internal temperature of 130°F
  4. Transfer to a cutting board and let rest 10 minutes
  5. Optional: Return steak to grill just to re-crisp exterior, about 1 minute per side
  6. Transfer back to cutting board and slice against the grain
